So now, drop the idea of buying expensive cakes and pastries from cake shops and try out these easy cake recipes at home. These diet recipes of cakes can be easily made at home with minimum and commonly available ingredients at home. Grease and flour a 9 inch square pan. In a large bowl, combine flour, sugar, baking powder and salt. Cut in margarine until mixture resembles coarse crumbs. Set aside ¾ cup of crumb mixture, to be used as a topping for the cake. Mix eggs and milk together and then blend into remaining mixture in bowl. Spread batter into prepared pan. Sprinkle blackberries evenly over the top. Sprinkle reserved crumb mixture over fruit. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Quick Sunshine Cake Ingredients: 1 package moist yellow cake mix 4 eggs cup vegetable oil 1 can mandarin oranges, juice reserved 1 package frozen whipped topping, thawed 1 package instant vanilla pudding mix 1 can crushed pineapple with juice Method: Beat the eggs, and add them to the boxed cake mix. Add the oil and the mandarine oranges to the batter; remember to add the juice as well as the fruit. Pour the batter into a greased and floured 9 x 13 inch pan. Bake the cake for 40 minutes in a preheated oven at 325 degrees F (165 degrees C). Cool on wire rack. While cake is baking, prepare the frosting by mixing together the whipped dessert topping, the package of instant pudding, and the crushed pineapple with its juices.
